1、 Product application:

The general state of wire drawing protein pre-treatment is a dry solid (moisture content of about 10%, water activity Aw of about 0.43), and the wire drawing protein must be allowed to absorb water and soften before use. After sufficient water absorption, the brushed protein will completely soften and exhibit the texture of fleshy fibers.

The brushed protein product has a good structure and a tissue of real meat fibers, making it very suitable for processing various high-end vegetarian meat like foods, such as vegetarian ham, vegetarian chicken, vegetarian fish, vegetarian hamburgers, vegetarian hot dogs, vegetarian tea geese, vegetarian steak, vegetarian meat floss, etc. The product itself also has good water absorption and oil retention. After appropriate processing technology, it is an ideal additive for high protein meat products. In the application of meat products, it can enhance meat texture, reduce costs, and increase protein content in the product. For example, it is used in quick frozen meat products such as minced sausage, western ham, Rice-meat dumplings, reconstituted steak (chicken chops, pork chops, etc.), fried chicken, hamburger meat dumplings, steamed buns, meat dumplings, etc; It is also an excellent choice for snack foods such as imitation beef jerky, reconstituted beef jerky, and meat and vegetable meat floss. 2、 General method:

(1) Rehashing: Soak the brushed protein in water until it becomes soft (without any hard core inside).

Soak in production water at room temperature (the softening time may vary depending on different product items, about 20 minutes to 1 hour). For microbiological considerations, it is recommended to use clean ice water (0-10 ℃) for better soaking (about 1 hour for softening). Use the softened silk protein as soon as possible; The soaked and unused drawing protein must be stored in an environment of 0-6 ℃ and used up within 48 hours.

(2) Dehydration: Place the softened silk protein evenly in a dehydrator to remove excess moisture.

A dehydrator with a drum diameter of 70cm and a speed of 1000rpm can dehydrate for about 3 minutes. One minute before the dehydration stage, washing the brushed protein with water can help remove excess bean flavor

The weight of the dehydrated drawing protein is about three times the dry weight (depending on the production of different products, the water content of the drawing protein can be adjusted). After rehydration and dehydration, 1 kilogram of drawing protein becomes 3 kilograms.

(3) Wire removal: Disperse and remove the dehydrated wire drawing protein.

Place the dehydrated drawing protein in a rapid pulping machine (blunt blade, speed about 500-1000rpm) and mash for about 2-3 minutes.
